Opinion: Where are the Eggs?

There used to be eggs. Everyone liked the eggs. What happened to the eggs? 

Students at SVCC have benefitted from the Agriculture Department’s farm to table projects in the past. The hydroponic Salad Tower in the cafeteria is one example of an Ag department hands on project. A sea of sunflowers and a pumpkin patch are two other recent endeavors that appeared to be successful.

What if you combine their Animal Science with their Food Science, to bring back a delicious possibility. Let’s say, starting small, what about bringing back the chickens? Chickens are small and manageable and produce eggs given the right conditions and incentives.

Eggs can be a great protein addition to the salad bar in the cafeteria. Eggs can be the breakfast brain food students need to kick start their day. Omelets, egg muffins or any other number of egg-cellent options make eggs the perfect choice to combine poultry education with real nutrition.
